As soon as I saw this recipe I knew I had to try it. I love bananas like you wouldn't believe and this dessert is so simple to make.
You'll need:
1/2 a cup of butter or margarine, cold
1 bag of Betty Crocker sugar cookie mix
1 egg, slightly beaten
1 pkg (8oz) of cream cheese, softened
1 can of sweetened condensed milk
1 tub (8oz) of whipped topping, thawed
1 box of instant banana pudding mix
3 medium ripe bananas, sliced
Step One:
Heat oven to 375. Spray 13 x 9 inch baking dish with cooking spray
Step Two:
In a medium bowl, cut butter into cookie mix using a pastry blender or fork, until mixture is crumbly. Reserve 3/4 cup mixture for topping. Mix egg in remaining mixture until incorporated. Press crumbs evenly in bottom of dish. Bake 13 to 15 minutes or until light golden brown around the edges. Cool completely.
Step Three:
In a 15x10x1 inch pan, place the reserved topping crumbs in a thin layer. Bake 8 to 10 minutes, stirring occasionally or until light golden brown. Cool completely. Crumble into small pieces. Set aside.
Step Four:
In a 3-quart mixing bowl, beat cream cheese with a mixer on medium speed, for 1 minute or until smooth. Add sweetened condensed milk. Beat until well blended. Beat in the whipped topping until smooth. Add the pudding mix and continue to beat an additional 2 minutes or until everything is well combined.
Step Five:
Spread 1/3 of the pudding mixture onto cooled base. Arrange bananas in a single layer over the pudding. Top with remaining pudding mixture and refrigerate for 10 minutes or until set. Sprinkle the cookie crumbs over the pudding.
** To serve, cut into 24 squares, 4 rows by 6 rows, and serve individually.

Hey, you must have been reading my mind! Been thinking of a great dessert to serve when my parents come for a visit this weekend. This is it! My Dad loves everything and anything banana, this is right up his alley. I'm not much of a baker, but I'm definitely going to give this a try. He is so going to love this. Thanks a bunch!
